We start with our Butter Croissant loaf, our classic sourdough with cold butter worked into the dough by hand, then fold in real Ghirardelli milk chocolate chips. The butter gives the crumb that soft, feathery, pastry-like pull, and the chocolate melts into it in sweet little pockets throughout.
Milk chocolate is the right call here. It's mellow and creamy rather than sharp, so it plays with the butter and the gentle sourdough tang instead of overpowering them. The result tastes like a 'pain au chocolat' that decided to become a sandwich loaf.
Toast a slice and the chocolate goes soft again. Excellent with coffee, unbeatable as French toast, and genuinely hard to stop at one slice. Baked in small batches.
