Classic Chocolate Chip Cookies

Our take on the classic starts where most cookies don't: with the discard from our own home-fed sourdough starter. That discard does quiet, patient work in the dough, adding a depth of flavor to the butter and brown sugar. The result is a cookie with crisp edges and a chewy, tender middle that tastes like it's been thought about.

We use real Ghirardelli semi-sweet chocolate chips, no compromises, so every bite has pools of actual chocolate rather than waxy filler. Each cookie is finished by hand with a pinch of flaky sea salt, which cuts the sweetness and makes the chocolate taste more like itself.

Baked in small batches. Best warm, but they hold their chew for days.
