Chocolate Espresso Peanut Butter Chips

Dark, rich, and just a little grown-up. These start with the same home-fed sourdough starter behind all our cookies, that Spinsterly touch that adds depth and keeps the crumb tender instead of dense. From there we go deep: real Dutch-process cocoa gives the dough its near-black color and a smooth, fudgy chocolate flavor without any bitterness.

A hint of espresso rounds it out. Not enough to taste like coffee, just enough to make the chocolate taste more like chocolate. Reese's peanut butter chips melt into salty-sweet pockets throughout, and a scattering of flaky sea salt on top pulls the whole thing into balance.

Crisp at the edges, chewy in the middle. Baked in small batches.
