Brie & Honey Fig Sourdough Loaf

The showpiece of the shelf.

We fold brie and a honey fig spread into our classic sourdough, naturally leavened with Li-Li, our home-fed sourdough starter. In the oven, the brie melts down and disappears into the crumb, so it doesn't sit in cheesy pockets. Instead, it enriches the whole loaf, leaving a soft, buttery richness in every bite. The fig stays put, though, in sticky-sweet pockets that catch you by surprise as you go.

The result is savory and just barely sweet, with the starter's tang running underneath to keep it all in balance. Golden crust, tender crumb, and a flavor that tastes far more complicated than a loaf of bread has any right to.

Serve it on a cheese board and skip the cheese. Toast it, tear it, or set it out warm and let people help themselves. Baked in small batches.

Ingredients: bread flour (unbleached hard red wheat flour, malted barley flour), spring water, salt, triple cremé brie (pasteurized cow milk, pasteurized cream, cheese cultures, salt, enzymes), sweet honey fig spread (figs, water, cane sugar, honey, lemon juice concentrate, pectin)
